QUINOA NUT + VEGGIE SALAD


Hey Everyone!!

This recipe (or versions of it) have been my go to lunch/dinner for the past month or so and I don't think I will EVER get sick of it?! It's super easy, super delicious and packed full of nutrient rich foods!

INGREDIENTS:

Almonds
Pepita seeds
Shredded coconut 
Lemon juice
Balsamic vinegar
Spring onion
Red cabbage
Tomato
Red Capsicum 
 Carrot
Kale
Snow peas
Spinach
Diced olives
1 Cup of cooked Quinoa (any colour)


METHOD:

Simply slice, dice, peel and chop all the veggies into your preferred serving shape/form. Set aside and place 1 cup of quinoa in a medium/large sized saucepan with double the amount of water to quinoa. Bring to the boil (with the lid on) and stir after boiling. Turn to a low simmer and wait for the water to cook off/soaked up by the quinoa. Fluff quinoa with a fork and add Lemon juice and balsamic vinegar to taste. Add all veggies and stir through until coated in quinoa. Add shredded coconut, pepita seeds and almonds and serve or chill in the fridge until you are ready to consume.

If you don't have some of the veggies on this list replace with whatever you've got!! This recipe is super versatile and you can mix it up with practically anything! 

VARIATIONS:

For a totally different take, stir-fry all veggies with lemon juice and paprika. Add cooked quinoa and serve hot or cold (I wouldn't recommend adding the coconut and nuts - although each to their own)

I also love making chia wrap parcels with any left over quinoa stir-fry/ salad. Simply grab yourself some Organic chia seed wraps (these are great!! no additives, nasty 282 or any other horrible preservatives.) Place a wrap on a flat plate and put a decent amount of quinoa salad/stir-fry in the middle. Fold into basic wrap form and close the top so none falls out! Place the folded edges face down in a pan with a small amount of coconut oil and flip once crispy and sealed. Serve with Freshly sliced avocado and lemon juice!

GO GREEN (SMOOTHIE)


Hey Everyone!!

This recipe is great for those who aren't big on their greens (also suitable for those who enjoy their greens as well). This green smoothie is packed full of nutrients and tastes delicious!!

Ingredients:

1 banana
1 green apple
1/2 an avocado
A handful of frozen mango
A handful of fresh spinach
A bunch of grapes
A splash of almond milk

Toppings:

Chia seeds
Peptia seeds
Muesli
Frozen raspberries 
Sliced green apple

Method:

Simply blend all ingredients in a blender or food processor until smooth(ie). Top with your favourite healthy toppings and enjoy!

This smoothie is bound to wake you up on a glum school morning!! Hope everyone has a great couple school year.... said no one ever.

CHERRY BERRY FIBRE SLICE


Hey guys!!

To me it seems as though I have been a little bit slack on my blog, although with school starting up again soon I think I will be permanently cutting back to 1 blog post a week, sorrryyy!!! I'll make them super special!! 

Here's a super easy recipe that is really good!!! Great for school, as long as you don't let the bars completely melt...

Ingredients:

1 cup of dates
1 cup of almonds
1/3 cup of raw cashews (unsalted)
1/2 cup of raw cacao
A pinch of hymalaian rock salt
1/4 cup of shredded coconut
1 tsp of vanilla extract 
1-2 tsp of water 
1/4 cup of frozen mixed berries
A large handful of fresh pitted cherries
Crushed almonds to top
shredded coconut to top


Method:

Combine dates, almonds, cashews, salt and water. Add vanilla and coconut and blend till combined. Place frozen berries and blend well, the mixture should resemble a dough. Transfer mixture into a lines baking tray and place cherries and crushed almonds on top (push the cherries and almonds into the slice so they hold their place). Place in the freezer for 1-2 hours and slice once set. Store in the freezer.

BANANA FRENCH TOAST


Hey Everyone!!

Unfortunately this recipe is not vegan.... BUT I did use home grown eggs from some of the best looked after chickens ever!!!

Ingredients:

Half a banana
1 egg (organic free range)
A splash of almond milk
Two pieces of organic seed bread

Toppings:

Frozen mixed berries
Nectarine 
Green apple
Chia seeds
Shredded coconut

Method:

Mash your banana in a small bowl until it resembles a paste. In a separate bowl thoroughly whisk an egg and a splash of almond milk together, then combine the two and soak your bread in the mixture until fully covered. Heat a medium sized non stick pan with a small amount of coconut oil or nuttelex and cook until crispy on both sides. 

Grab a large handful of frozen mixed berries and place them in the pan after removing the Banana french toast. Cook until unfrozen. Slice your nectarine and apple. Arrange in a cool way on the plate and eat up!!

BANANA & ALMOND BUTTER TOAST


Hey Everyone!!

A suuuper simple and easy recipe for breakfast or a snack! Almond butter is one of my favourite things to have on toast and it's extremely good for you! Packed full of protein it's great paired with nearly anything!! Just be careful not have too much as almond butter does have a high fat content (the good fats, like avocados).


Almond Butter Ingredients:

2 Cups of almonds
a couple of pinches or rock salt

Method:

Simply blend your almonds in a food processor until they become a thick paste, this may take a while depending on your machine! Once the almonds have turned into a paste add the pinches of salt and blend for another 30 seconds. Remove from food processor and place in an airtight container/jar and store in the fridge for up to two weeks!

Banana & Almond toast:

1 banana
1/2 teaspoon cinnamon
Frozen raspberries
1 teaspoon of chia seeds
almond butter to preference 
two pieces of organic seed bread

Method:

Cook your toast in a toaster, place almond butter on cooked toast and slice up the banana and scatter on top. Sprinkle over cinnamon, chia seeds and frozen raspberries.

As I said before, this is so easy!! Almond butter is also great paired with carrot, celery, snow peas, apple, grapes, berries etc....

MIXED BERRY FROZEN 'NICE-CREAMS'


Hey Everyone!!

 What more does one want on a hot summers day, than a nice refreshing ice-cream?! This 'nice-cream' recipe has got you covered!! (without all the nasties)

Ingredients:

1 orange
a massive handful of mixed berries
1 banana
a splash of almond milk

Blend all the ingredients in a blender until they form a smoothie consistency. Get yourself some ice-cream moulds and fill them up to the top and place in the freezer until set. 

Optional extras:

shredded coconut
chia seeds
crushed nuts

Add these into your smoothie AFTER you've blended all the other ingredients together.

And there you have it! A super easy recipe that will cool you off in a instant!! This is also great for ANY smoothie you have left over!

CREAMY VEGAN PORRIDGE


Hey guys!!

For those of you who don't know, it's summer here in Australia. This usually means warm sunny mornings, hot days and hours at the beach... Tasmania has other ideas, punishing us with freezing mornings and rainy gloomy skies (with some exceptions - today is obviously one of the exceptions)

 This porridge is packed full of protein!!

Ingredients:

1 mashed banana
1/2 cup of rolled oats or plain old oats
1 cup of almond milk
2 tbsp of pea protein (optional) 
Frozen berries
Frozen mango 
Chia seeds


Simply mash your banana in a medium sized saucepan, add the oats and almond milk and place your saucepan over a medium to high heat. Stir continuously, until the oats have softened, add in optional portien powder and continue to stir until a majority of the liquid has been soaked up by the oats.
