CACAO PROTEIN SMOOTHIE


Hey guys!! 

Quick and super easy recipe today! This smoothie is a great source of energy, I usually have one before school or before I do a workout out!

Ingredients for cacao protein layer:

2 bananas
1 Large handful of frozen mango
1 orange (peeled)
1 tsp of raw cacao powder
1 tsp of vanilla protein powder 
splash of almond milk

Blend all ingredients in a blender until thick and creamy. Poor half into your jar or cup and add the following ingredients to the rest of the smoothie.

Ingredients for mixed berry layer:

Handful of frozen raspberries
Half a handful of almonds
3-4 apricot halves (I used canned)
Generous splash of almonds milk

Poor the remainder of the smoothie into your jar and top with chia seeds, pepita seeds (also known as pumpkin seeds) and frozen berries!! as you can see i actually have three layers, I didn't have much of the mixed berry smoothie as I was making it for my mum, so I filled a majority of my jar with the cacao protein smoothie.

You can probably notice the berries being drowned by the smoothie.... I sprinkled a few frozen raspberries in between layers.

TOFU & VEGGIE BURGER


Hey Guys!!

This recipe is super easy and is great for lunch and dinner. All you need to do is grill a bun, fill it with some veggies and cooked tofu and you're done!

What you'll need:

tofu
carrot
spinach
avocado
tomato
Beetroot dip (will link recipe below)

I also had carrot sticks on the side with my burger (as you can see in the pic)

Simply slice the tomato, peel the carrot, dice the avocado and place inside a toasted whole grain bun. I used the beetroot as a substitute for tomato sauce, so I spread a reasonably thick layer on the top and bottom of the bun.

The beetroot dip is super easy!! you will find the recipe here --> beetroot dip!!

It is delicious on vita wheat crackers, carrot and celery sticks or dare I say it, by itself... I loooooove beetroot!!!!

VEGAN CHOCOLATE & MIXED BERRY SLICE

(raw, vegan, refined sugar free)

HEY EVERYONE!!!

I am sooooo exited to share this recipe with you! I've been dying to make vegan slices for so long but I haven't had the time or some of the ingredients... So Mum and I went to the local Health Food store and stocked up!

 I had managed to save over 10 recipes that I wanted to make but when my friend Josie sent me this one I couldn't resist!! 

I absolutely love the fact that there is no diary or ANY animal products in this recipe, along with refined sugar! It tastes delicious and it is not bad for you or the environment?!! what more could you ask for!


This recipe is divided into three steps: 

base, middle layer and top layer

BASE INGREDIENTS:

1 cup of raw nuts (I used half almonds half cashews)
1/3 cup of raw cacao (NOT cocoa)
3 table spoons of coconut oil (melted, this comes in a jar)
12 medjool dates, pitted


METHOD FOR BASE:

Measure out all the ingredients into the required amounts. Cut medjool dates in half and remove pips. Melt 3 tablespoons of coconut oil in a saucepan over medium to high heat until it turns to liquid. After doing this you can place all the ingredients into a blender (I used a Thermomix) and blend until the nuts are crushed and the ingredients have formed together well. 

Poor mixture into a lined slice tray and firmly smooth the mixture into the base of the tray (I used the tips of my fingers but you can also use a spoon). Place the tray into the freezer to set and move onto the next layer.


MIDDLE LAYER INGREDIENTS:

2 cups of frozen raspberries or mixed berries
2/3 cup of raw cashews
4 tablespoons of shredded coconut
6 tablespoons of organic maple syrup
1 tablespoon of coconut oil, melted

METHOD FOR MIDDLE LAYER:

Blend all the ingredients, BUT the coconut oil in a blender until smooth. Add coconut oil and blend until well combined. Add the mixture to the base layer and smooth down with a spatula. Pop back in the freezer and leave to set for 1 hour.


TOP LAYER INGREDIENTS:

1/2 cup of coconut oil
1/2 cup of cacao powder
1/4 cup of organic maple syrup

TOP LAYER METHOD:

Melt the coconut oil in a half boiler (saucepan filled up half way with water and a metal bowl over the top). Once the coconut oil is completely melted whisk in the maple syrup. Once combined whisk in cacao powder and remove from heat. IMMEDIATELY smooth chocolate mixture onto the frozen slice. Work quickly as the chocolate will set fast. 

Place completed slice back into the freezer for another hour or until completely set. 

After the slice has set remove slice from the tin. Slice into smallish pieces (the slice is quite rich) and place into an air tight freezer container and put back into the freezer to store. The slice will last up to 2 weeks although I am sure it will be demolished before then ;)
