CREAMY VEGAN PORRIDGE

Hey guys!!

For those of you who don't know, it's summer here in Australia. This usually means warm sunny mornings, hot days and hours at the beach... Tasmania has other ideas, punishing us with freezing mornings and rainy gloomy skies (with some exceptions - today is obviously one of the exceptions)

This porridge is packed full of protein!!

Ingredients:

1 mashed banana
1/2 cup of rolled oats or plain old oats
1 cup of almond milk
2 tbsp of pea protein (optional)
Frozen berries
Frozen mango
Chia seeds

Simply mash your banana in a medium sized saucepan, add the oats and almond milk and place your saucepan over a medium to high heat. Stir continuously, until the oats have softened, add in optional portien powder and continue to stir until a majority of the liquid has been soaked up by the oats.

I hope you enjoy this easy breakfast recipe! Hopefully you won't be needing it much longer!!

MANGO, AVO & BERRY LAYERED SMOOTHIE

Hey Everyone!!

This recipe is not for the faint hearted... Or small tummied! It's a bit of a weird combo but I was having a 'go big or go home' moment.

Sooooo, for the first layer:

1 banana
a handful of frozen mango
an orange
a small splash of almond milk

Blend to a smooth consistency and poor half into your jar, glass, bowl or whatever item you are using.

With the remainder of the mixture add:

a handful of fresh spinach
1/4 of an avocado
2 apricot halves (I used canned)

Blend to a smooth consistency and poor half into your smoothie holding item.

With the other half of your green mixture add:

a massive handful of frozen raspberries (or frozen mixed berries)
half an orange

Blend together your final layer and top with berries, chia seeds and nuts (I used raw cashews). I only used half of the raspberry mixture and gave the other half to my mum.

This smoothie is MASSIVE!!!!!! I struggled to consume all of it and I eat 24/7... This would definitely serve two people!!

ENJOY!!

VEGAN CRUNCHY CARAMEL SLICE

Hey everyone!

Before I get this recipe started I would just like to THANK YOU ALL FOR 5K BLOG VIEWS!! I am in shock! when I started this blog I thought everyone would think I was weird or crazy... But it has been the complete opposite (thankfully). Everyone has supported me and showered me in lovely comments and I am so so so thankful!!! As I am writing this I have a massive grin on my face and my family members are probably somewhat concerned...

Ok, enough of the soppy appreciation speech and now for the delicious goooooodness!!

Base:

1 cup of almonds (or half cashews half almonds)
12 medjool dates
1 tbsp of cacao
1 tbsp of coconut oil (melted)
1 tbsp of pure maple syrup (not the one full of sugar!!)

Method:

Blend everything together until it forms into a thick dough like consistency and press into a lined slice tray and place in the freezer. I ran my hands under cold water and didn't dry them when pressing the mixture into the tray as it was veeeerry sticky!

Caramel layer:

10 medjool dates (soaked in hot water - MUST do this if you want your caramel to be yummy and gooooie)
2 tbsp coconut oil (melted)
1 tbsp of almond milk (add two tbsp for a less PB tasting caramel)
2 tbsp of peanut butter
1/3 cup of raw cashews

Method:

Blend the dates together until they are in medium sized clumps. Add the remainder of the ingreidients and blend until the cashews become little cruncy lumps (I'm really struggling with my describing words... Sorry).  Remove slice out of the freezer and spread the caramel layer on top, pop back into freezer for 30 mins to 1 hour.

Choc layer:

3 tbsp of coconut oil
1 tbsp of cacao powder
2 tbsp of peanut butter

Method:

Completely melt coconut oil in a saucepan and remove from heat, add the cacao and PB to the coconut oil and stir until combined and the PB has melted. Poor on top of caramel layer and place back into the freezer to set over night.

Chop ino bit size pieces after the slice has completely set and store in an airtight container in the freezer.... and you're done!!

I hope you enjoy these scrumcious vegan crunchy caramel slices!!

I have many other vegan treats coming your way, I will also be making a vegan raw 'cheese' cake so keep and eye out for that in the near future!!

I have also decided I will only be posting once a week, or possibly twice if I can't wait to share something! Or maybe when I create a new recipe that I think deserves sharing... anyway keep an eye out!

ENJOY

MANGO SMOOTHIE

Hey guys!!

Since it's mango season here in Australia and nearly Summer (not that it will be getting warm in Tasmania for ageees) I thought this smoothie would be good to share!!

Blend the following ingreidients in a blender and blend until smooth or thick:

2 bananas
1 apple
1 orange
A MASSIVE handful of frozen mango
Splash of almond milk

This recipe is supposed to be really thick (the same constancy of nana nice-cream), add more frozen mango if you want it extremely thick or more almond milk if you prefer your smoothies thinner.

This recipe served nearly two jars, if you're only making one for yourself use 1 banana.

I pored half of the smoothie into my jar and sprinkled a layer of museli, I then added the remainder of the smoothie and added another layer of museli and berries to finish off!

Enjoy!!

VEGAN CHOC BALLS

Hey guys!!

This recipe is a extremely easy, yummy and healthy!

Blend the following ingredients together:

3 cups of dates (soak for 30 mins)
1 cup of almonds
Juice of one orange + the pulp
1 cup of raw cacao
a small handful of frozen raspberries

Place all the ingredients in a blender and blend until a smooth consistency

Place a layer of glad wrap or baking paper in a small slice tray and smooth the mixture out into the tray. Set in the fridge over night. After the slice has set remove from slice tray and pull off small amounts and roll into balls (this is really messy omg), then roll in desiccated coconut and store in an airtight container in the freezer.

These are extremely rich!! Although they are great paired with a fruit salad or just on their own!!

MY DAILY WORKOUT ROUTINE

Hey everyone!!

THANK YOU SO MUCH FOR 3.5K BLOG VIEWS!!! absolutely craaazy!

This blog post is quite different to my others, and I'm actually really scared :///
Before I wrote this I was worried people would would judge me... but hey, who cares what people think?!

I will be showing you what I do to keep my body healthy! Eating the right foods is one thing, but doing exercise on top of eating yummy healthy foods will keep you in tip-top condition - don't worry it's fun!!!

So, time for the workouts. I usually do 1 hour to 1.5 hours of full body workouts every night, trying to target everywhere!! On the nights, or sometimes the mornings I feel as though I have enough energy to last a life-time I will do an extra half an hour of cardio (usually I go for a run). Other nights when i'm feeling sick or tired I will do a light ab or leg workout, or possibly just have a rest day and do some stretching.

Ok, now it's really time for the workouts:

VS LEG BURNER (10 mins) x 2

Another workout I loooove is the VS CARDIO (17 mins). I sometimes do this instead of doing 10 min cardio twice!

I LOVE XHIT! The videos on the channel are extremely good quality and have suuuper clear instructions!!

I usually do the workouts in this order: leg workout, Ab workout, leg workout, ab workout and the cardio workout to finish off.

On top of the full body workout I usually do some yoga for 10mins, 20mins or sometimes up to 40mins when I'm try to nail a few new poses. This is how I work my arms and back.

Never forget to stretch!!!!! I stretch whilst doing yoga. If you're not a yoga fan you can do the simple hamstring, glutes, arm and back stretches. 10-15mins of stretching would be ideal!!

By the time I have finished all of this I'm absolutely starving!! I will head straight to the fridge, pantry or freezer and grab a banana, some left over smoothie or some vegan slice - a recent discovery :0

Workout snacks before you start are also a must! You will probably suffer from server hunger during the middle of your workout otherwise... So I usually go for:

Banana and Berry Toastie:

I know this sounds absolutely rank and I have no clue how I came across the idea of making one but they are amazing!!! I have never looked back ;) All you need to do is grab yourself a banana, handful of frozen berries and some wholegrain bread and mash the banana and spread it inside the bread, sprinkle the berries on top of the banana and toast it. Then... eat!!

Fruit Salad:

Simple but delicious. Grab 3-4 different fruits, chop them up and sprinkle some chia seeds on top. I usually use apple, banana, berries and peaches or apricots. The other day I added some vegan choc and orange balls, soooo good!! (Recipe up soooon)

Beetroot dip & Vita Wheats:

Grab some beetroot dip and spread it on some vita wheats - easy peasy!

Cacao Protein smoothie:

Recipe here!

So, there it is! My daily fitness routine! This is just what I've been doing for the past week. I tend to mix it up every week, trying to increase the difficulty to maximise results!

I hope you all enjoy and try out some of the workouts!!!

NOTE: I am obviously not a professional fitness instructor, personal trainer or anything of the like (as much as I would like to be). I am simply just exercising to gain health and fitness.

NOTE: The workout videos do not belong to me. XHIT is a youtube fitness channel, with professional instructors trained and qualified in what they do.

CACAO PROTEIN SMOOTHIE

Hey guys!!

Quick and super easy recipe today! This smoothie is a great source of energy, I usually have one before school or before I do a workout out!

Ingredients for cacao protein layer:

2 bananas
1 Large handful of frozen mango
1 orange (peeled)
1 tsp of raw cacao powder
1 tsp of vanilla protein powder
splash of almond milk

Blend all ingredients in a blender until thick and creamy. Poor half into your jar or cup and add the following ingredients to the rest of the smoothie.

Ingredients for mixed berry layer:

Handful of frozen raspberries
Half a handful of almonds
3-4 apricot halves (I used canned)
Generous splash of almonds milk

Poor the remainder of the smoothie into your jar and top with chia seeds, pepita seeds (also known as pumpkin seeds) and frozen berries!! as you can see i actually have three layers, I didn't have much of the mixed berry smoothie as I was making it for my mum, so I filled a majority of my jar with the cacao protein smoothie.

You can probably notice the berries being drowned by the smoothie.... I sprinkled a few frozen raspberries in between layers.

Enjoy!!

TOFU & VEGGIE BURGER

Hey Guys!!

This recipe is super easy and is great for lunch and dinner. All you need to do is grill a bun, fill it with some veggies and cooked tofu and you're done!

What you'll need:

tofu
carrot
spinach
avocado
tomato
Beetroot dip (will link recipe below)

I also had carrot sticks on the side with my burger (as you can see in the pic)

Simply slice the tomato, peel the carrot, dice the avocado and place inside a toasted whole grain bun. I used the beetroot as a substitute for tomato sauce, so I spread a reasonably thick layer on the top and bottom of the bun.

The beetroot dip is super easy!! you will find the recipe here --> beetroot dip!!

It is delicious on vita wheat crackers, carrot and celery sticks or dare I say it, by itself... I loooooove beetroot!!!!

Hope you all enjoy this scrumptious recipe!!

Oh and... more delicious vegan treats coming your way this weekend (my new obsession).

VEGAN CHOCOLATE & MIXED BERRY SLICE

(raw, vegan, refined sugar free)

HEY EVERYONE!!!

I am sooooo exited to share this recipe with you! I've been dying to make vegan slices for so long but I haven't had the time or some of the ingredients... So Mum and I went to the local Health Food store and stocked up!

I had managed to save over 10 recipes that I wanted to make but when my friend Josie sent me this one I couldn't resist!!

I absolutely love the fact that there is no diary or ANY animal products in this recipe, along with refined sugar! It tastes delicious and it is not bad for you or the environment?!! what more could you ask for!

This recipe is divided into three steps:

base, middle layer and top layer

BASE INGREDIENTS:

1 cup of raw nuts (I used half almonds half cashews)
1/3 cup of raw cacao (NOT cocoa)
3 table spoons of coconut oil (melted, this comes in a jar)
12 medjool dates, pitted

METHOD FOR BASE:

Measure out all the ingredients into the required amounts. Cut medjool dates in half and remove pips. Melt 3 tablespoons of coconut oil in a saucepan over medium to high heat until it turns to liquid. After doing this you can place all the ingredients into a blender (I used a Thermomix) and blend until the nuts are crushed and the ingredients have formed together well.

Poor mixture into a lined slice tray and firmly smooth the mixture into the base of the tray (I used the tips of my fingers but you can also use a spoon). Place the tray into the freezer to set and move onto the next layer.

MIDDLE LAYER INGREDIENTS:

2 cups of frozen raspberries or mixed berries
2/3 cup of raw cashews
4 tablespoons of shredded coconut
6 tablespoons of organic maple syrup
1 tablespoon of coconut oil, melted

METHOD FOR MIDDLE LAYER:

Blend all the ingredients, BUT the coconut oil in a blender until smooth. Add coconut oil and blend until well combined. Add the mixture to the base layer and smooth down with a spatula. Pop back in the freezer and leave to set for 1 hour.

TOP LAYER INGREDIENTS:

1/2 cup of coconut oil
1/2 cup of cacao powder
1/4 cup of organic maple syrup

TOP LAYER METHOD:

Melt the coconut oil in a half boiler (saucepan filled up half way with water and a metal bowl over the top). Once the coconut oil is completely melted whisk in the maple syrup. Once combined whisk in cacao powder and remove from heat. IMMEDIATELY smooth chocolate mixture onto the frozen slice. Work quickly as the chocolate will set fast.

Place completed slice back into the freezer for another hour or until completely set.

After the slice has set remove slice from the tin. Slice into smallish pieces (the slice is quite rich) and place into an air tight freezer container and put back into the freezer to store. The slice will last up to 2 weeks although I am sure it will be demolished before then ;)

I hope you all enjoy this delicious cruelty and guilty free slice as much as I do!!

SWEET POTATO WEDGES & SALAD

Hey guys!!

I have a really exciting recipe coming in the next few days, but I though I would post this anyway... it was to good not to!!

For the wedges:

1 sweet potato
a tinny drizzle of extra virgin olive oil

Simply peel the sweet potato and chop into wedge sized chunks. Lay on a baking tray and drizzle with a tiny bit of olive oil. Set the oven for 200 degrees and pop your wedges in, check on them after 10mins, shake them around a bit and then place in the oven again for another 10-15mins.

Avocado dip:

half an avocado
half a lemon
parsley

Mash the avocado till smooth, add squeezed lemon juice and half a handful of parsley.

Salad:

Nut and Veggie Salad

I didn't have any beetroot so I sliced up a green apple and added that instead!

This recipe is great for dinner or even lunch!

ENJOY!!

DOUBLE SMOOTHIE (mango + mixed berry)

Hey everyone!!

I'm sorry I haven't been posting as much recently, I've been doing so much!! Homework, massive projects due for school, catching up on school work I missed out on... The list is endless! To give myself a bit of a 'pick me up' this morning I decided I was going to have the best of both worlds and create a double smoothie!

Blend the following ingredients together into a thick consistency:

2 average handfuls of frozen mango (add a bit more If needed)
1 banana (add another if needed)
A green apple
A splash of almond milk

After creating this mixture fill up half your glass. If you find that you don't have enough mixture left for the second layer add another banana and a bit more mango. After doing so place your smoothie blender tub thing (I have no idea what to call it) back on the blender and add a large handful of frozen berries and another splash of almond milk and blitz to the same consistency as the first layer!

Once you've finished these two easy steps you will find yourself with a delicious smoothie! I decided not to put anything on top and to just enjoy the goodness by itself, but you may like to sprinkle some chia seeds and almonds on top for that little bit of extra flavour. (not that you can really taste chia seeds....)

Hope you all enjoy!!

NUT & VEGGIE SALAD

Hey guys!

Just a quick recipe today as I've been suppppeeerrr busy!!

Sorry to anyone who has nut allergies, it will taste just as good with out the cashews :)))

This salad is perfect for lunch (I take a salad like this to school nearly everyday) or to pair with your meal at dinner time (a salad and a green smoothie are great for dinner).

You can use any veggies, although these are my personal favourites!

Ingredients:

half a carrot (peeled)
coz lettuce
half an avocado
beetroot (canned)
feta cheese
a handful of unsalted cashews
a teaspoon of chia seeds

All you need to do is dice the beetroot into small squares (approx 1 cm), after peeling the peel off the carrot continue to peel the carrot into spaghetti like strips until you've got enough to for-fill your hunger, tear up some coz lettuce, slice half an avocado and sprinkle some feta cheese, chia seeds and
cashews over the top and eat up!!

others veggies (or fruit) I may use:

snow peas
celery
tomato
spinach
green apple
roast pumpkin
roast potato
Pear

Enjoy!

BANANA & CINNAMON PANCAKES

Hey Everyone!!

Sorry I've been a bit slack lately... I've been having way to much fun with my fam-jam over in melbourne!

This recipe is a little different to the other recipes I've previously uploaded, but it was to good not to share! it's super easy and guilty free! All you need to do is blitz the following three ingredients together and you've got yourself a delicious healthy breakfast!

Ingredients:

2 Bananas
2 Eggs
A pinch of cinnamon

Before combining all the ingredients I mashed the banana into a paste, I then placed the eggs and cinnamon in the bowl and stirred the mixture together. You may have enough patience to stir it until it forms into a smooth consistency, but I didn't so I gave it a quick blend with a blending stick!

After you've blended your mixture, cook your pancakes on a low heat with a small amount of butter so they don't stick, beware, the banana burns easily!

the recipe cooks approximatley 10 small pancakes.

After you've cooked your pancakes serve with blueberries (I used frozen) and strawberries (or any other fruits you like)

Enjoy this delicious recipe!!

WATER MELON & MIXED BERRY SMOOTHIE

Hey Guys!

This recipe is delicious and very simple! As you can probably tell I make my smoothies by chucking in random ingredients until it tastes good, lots of the proportion sizes aren't exact, although that wont effect the taste ;))

All you need to do is blend the following ingredients together:

1 Banana
1 green apple
a small handful of frozen mango
a handful of mixed berries
approximately half a cup of watermelon (chopped into cubes)
a generous amount of crushed pineapple (I used canned)
a small handful of goji berries
a generous amount of almond or coconut milk

For this smoothie I decorated it with the following toppings:

1 teaspoon of chia seeds
a small handful of almonds
a small handful of frozen berries
a kiwi fruit sliced and placed around the bottom of the jar

I hope you all enjoy this recipe! I will be mixing it up a little with my next recipe, so keep an eye out!

MANGO NANA NICE-CREAM

Hey guys!

I've been trying to fight off a cold lately and I was looking for something to soothe my sore throat, so I came up with this!

This recipe is suuuuuuper delicious, super simple AND it tastes just like ice-cream, with out all the nasties (hence 'nice-cream')

All you need to do is chuck the following ingredients in a blender:

1 banana
1 cup (or a bit more) of frozen mango dices
a spoonful of crushed pineapple
a splash of almond milk

This recipe is veeery thick, your blender may struggle with this, (I use a thermomix for anybody who was wondering) when it comes to putting your 'nice-cream' in a jar I would recommend using a spoon, otherwise you may end up with it all over your bench :)

I hope you all enjoy this delicious recipe!
